Natural coffee tend to have more fruit and superb flavors because the bean has more time to interact with the natural sugars from the cherry as enzymes break down the mucilage around the bean. In order to have consistent quality, we carefully dry naturals, turning them often and removing over-ripes then to make sure off flavors won't emerge in the roasted coffee.

Washed coffee
Washed coffees are prized for their acidty and vibrant notes. Removing the entire cherry prior to drying allows the intrinsic flavors of the bean to shine without anything holding them back.

YIRGACHEFE known for its sweet flavor and aroma with a light to medium body, Ethiopian Yirgacheffes is spicy and fragrant, and are frequently reviewed and rated as some of the highest quality Arabica coffees in the world.
Kochere Banko Gotete coffee has a bright acidity along with intense, clean tastes and a complexity of floral notes in the aroma, sometimes with a hint of toasted coconut. It has a distinctively fruity flavor profile and a bright floral aroma.
